Prepare the Vinaigrette
Ingredients
¼ cup olive oil
3 Tbsp red wine vinegar
1 Tbsp lemon juice
2 garlic cloves, minced
1 tsp dried oregano
½ tsp salt
¼ tsp black pepper

Whisk the dressing ingredients together in a small jar or salad dressing bottle.

Assemble the Salad
Ingredients
1 (15oz) can of black beans, drained and rinsed
1 cup Persian cucumber, diced
1 red bell pepper, diced
¼ cup red onion, finely diced
1 cup cherry tomatoes, quartered
1 cup Athenos crumbled feta cheese
¼ cup fresh dill, chopped
¼ cup fresh parsley, chopped
Instructions
Add the salad ingredients to a large bowl.

Dress and Serve
Instructions
Pour the dressing over the salad and toss until it’s fully coated.
Serve immediately or keep it chilled in the refrigerator for easy lunches during the week.
