Notes: Use room temperature eggs if possible. Don’t over-mix the batter; a few lumps are okay and contribute to a fluffy texture. If not using a scale, fluff the flour, spoon it into the measuring cup, and level it off.

Notes: To keep waffles crisp, place them on a wire rack after cooking. You can keep them warm by placing the wire rack in an oven set to 200°F. Let the waffle iron heat up for at least 30 seconds between each waffle.
