Prepare the Syrup Mixture

Notes: The sugar and corn syrup are the base of the pie filling.

1 cup sugar

1 1⁄2 cups corn syrup (1/2 dark and 1/2 light)

In saucepan boil sugar and corn syrup together for 2 to 3 minutes.

Set aside to cool slightly.

Notes: Straining ensures a smooth pie filling.

4 eggs

Syrup mixture (from previous step)

In a large bowl, beat eggs lightly.

Very slowly pour the syrup mixture into the eggs, stirring constantly.

Strain the mixture to make sure it's smooth and lump free.

Notes: The butter will melt in the warm mixture.

Stir in butter (it will melt when stirred into warm mixture), vanilla, and pecans to the egg and syrup mixture.

Pour into crust.

Bake in a 350°F oven for about 45 to 60 minutes or until set.
