Healthy Sweet Potato Brownies

Cook the Sweet Potato

Notes: You can cook the potato and refrigerate it up to 5 days in advance.

Ingredients

Sweet potatoes (to yield 1 cup mashed)

Instructions

Cook the sweet potatoes using your preferred method. The recipe suggests chopping them into large chunks and boiling in water for 15-20 minutes, or until very tender.

Allow the cooked sweet potatoes to cool completely. You can transfer them to a sealable container and refrigerate.

Once cool, remove and discard the peel from the sweet potatoes.

Prepare Oven, Pan, and Mash Sweet Potato

Ingredients

Cooked, cooled, and peeled sweet potatoes (from previous step)

Instructions

Preheat the oven to 350 degrees F.

Line a 9-inch square baking pan with parchment paper.

Mash the sweet potatoes until smooth.

Measure out 1 cup of mashed sweet potato.

Mix Wet Ingredients

Notes: You can use a food processor to make this brownie batter if you prefer doing so over a mixing bowl!

In a large mixing bowl, add the 1 cup of mashed sweet potato, almond butter, eggs, pure maple syrup, and vanilla extract.

Stir well until all wet ingredients are thoroughly combined and smooth.

Add Dry Ingredients and Chocolate Chips

Instructions

To the bowl with wet ingredients, stir in the cocoa powder, baking soda, sea salt, and ground cinnamon (if using).

Mix until a thick, creamy batter forms. There's no need for a separate bowl for dry ingredients.

Add in the chocolate chips and stir until they are well-incorporated into the batter.

Bake the Brownies

Notes: Brownies are best when baked to an internal temperature of 180 degrees Fahrenheit. Insert a digital thermometer into the center of the brownies and wait until the numbers stop moving to get an accurate read on their temperature.

Extra chocolate chips (optional, for sprinkling)

Instructions

Pour the brownie batter into the prepared baking pan and spread it into an even layer.

If desired, sprinkle extra chocolate chips on top.

Bake on the center rack of the preheated oven for 23 to 28 minutes, or until the brownies reach your desired level of doneness.

For fudgy, gooey brownies, bake for 23 minutes.

Cool, Slice, and Serve

Notes: Store any leftover brownies in an airtight container (or a zip lock bag) in the refrigerator for up to 5 days. These brownies also freeze very well! Freeze them in a zip lock bag for up to 3 months.

Instructions

Allow the brownies to cool completely in the pan (at least one hour) before slicing and serving for best results.

Slicing before they have finished cooling may result in slices not holding together quite as well.

Serve the brownies as they are, or with a scoop of ice cream for an even more decadent dessert.
